BERKSHIRE PROSCIUTTO – BECKER LANE FARM

Olli Salumeria Berkshire Prosciutto is air-cured ham made from the hind leg of the pig. Our prosciutto is made from certified organic Berkshire hams of a large size (anywhere from 28 to 32 pounds each) from Becker Lane Farm. These hams, are cured with bone-in and skin on (and hand-rubbed with sea salt), and aged for 16 months. After de-boning the prosciutti are hand-tied with twine in the traditional “addobbo” style.

ABOUT THE BREED:

Berkshire (sires) and Chester White (sows) are the select heritage breeds originating from Britain that are bred and raised on the farm. Both breeds are known for highly marbled meat with superior eating qualities. Berkshires consistently produce a whole carcass that is prized for its juiciness, flavor and tenderness, is pink hued and well-marbled. Chester Whites contribute a larger loin eye size, and are known for their superior mothering skills, an important attribute when pigs are raised outdoors. Breed is a primary factor contributing to the great taste of Becker Lane certified organic pork.

HOW OUR PROSCIUTTO IS CURED:

Prosciutto, whose name comes from the Latin word for “deprived of all liquid”, has been made in Italy since the second century BC. The fat and hide are trimmed, then salt is massaged into the meat periodically for a month. At the end of the month, the hams are washed off and dried in a warm room before being transferred to a cool room for 2 more months. The hams are finished and aged for a total of 16 months. During this long aging period, hams will lose up to 1/2 of their weight.
