Distinction is the Hampton Roads Lifestyle Magazine, and their Mike Hixenbaugh came to visit Olli Salumeria just before the holidays. Olli loves talking about his inspiration and process, and the Distinction writer was treated to a thorough discourse about what sets our salumi apart. “Meat is a very difficult medium,” he says, sounding oddly poetic for someone leading a tour of a small processing plant. “It leaves little room for error. It’s quite messy. But if you give it time, you can do beautiful things with it.”
