Q: How do you peel salami?
1. Slice off the end of the salami.
2. Make a shallow slit down the center. Don’t cut too deep so it doesn’t cut into the meat.
3. Peel back the edges of the casing and pull it back to the point where you’ll be slicing to.
4. The salami is now ready to be sliced and served!
Q: Where can I find your products?
Visit our Where to Buy page (also at the top right area of every page).
Q: Your products aren’t available locally. How can I get my local store to carry your products?
Q: What is the white stuff on the outside of my salami?
The salami’s casing is covered in a powdery dusting of benign white mold, which is removed before eating. This is a “good” type of mold, which helps cure the salami and fend off evil, nasty bacteria.
Q: How should I store salami?
Although our salami products are shelf stable at room temperature, and you may have bought it this way, we would recommend refrigerating our salami before and after opening. After opening simply place unused portion in a zip-lock bag or wrap with plastic wrap.
Q: Can I buy your products online?
Check out our Where to Buy page for online retailers who carry our products.
Additionally, you can buy our products and have them shipped via our online shop.
Q: What is Olli salami made from?
Our salami is made from high-quality pork that comes from pasture-raised pigs raised on family farms. The color of the meat is a deeper mahogany color as compared to the more pinkish colored pork you may be familiar with. The flavor is earthy and meaty and really tastes awesome. But, don’t take our word for it – renown chefs and other folk are saying good things about our salami.
Q: Are your products gluten-free?
Yes, all Olli Salumeria products are 100% gluten-free.
Q: What is special about Olli salami packaging?
Our packaging isn’t hand-wrapped, but therein lies the secret to the amazing taste and texture of our salami. Our equipment seals each salami inside airtight translucent film that keeps the salami fresh – in the store and at home. It keeps the salami from slowly drying out and getting hard and unpleasant to eat while it’s in a store waiting to be purchased.
Once removed from the outer packaging, the salami shows its beautiful, powdery rind and string-tied ends.
Another bonus – our labels are bright and colorful, too!

Q: How do I know if the salami that I’m about to eat is good or if it has excessive mold?
The best thing to do is peel back the casing and check the salami for a clean and pleasant smell. If it smells and feels good, then you should be able to enjoy it. If you have any questions about the quality of our product, please contact us at email@example.com.
Q: I’m a retailer. How can I get set up to sell Olli products in my store?
