Olli Salumeria Prosciutto is air-cured ham made from the hind leg of the pig. Our prosciutto is made from hams of a larger size, which are then cured with bone in and skin on, hand-rubbed with sea salt, and aged for 16 months in the Italian Valley of Parma.
