Olli Salumeria™ Mangalitsa Prosciutto crudo is air-cured ham made from the hind leg of the pig. This prosciutto is made from Mangalitsa hams of a medium size (anywhere from 20 to 30 pounds each when uncured) from Mosefund Farm, New Jersey. These hams, are cured with bone-in and skin on (and hand-rubbed with sea salt), and aged for 16 months in the true Prosciutto di Parma style.
