Olli Salumeria® Prosciutto crudo is air-cured ham made from the hind leg of the pig. This prosciutto is made from hams of a large size (anywhere from 28 to 40 pounds each when fresh). These hams, are cured with bone-in and skin on (and hand-rubbed with sea salt), and aged for 16 months in the Italian food valley of Parma, where the fresh air and centuries of prosciutto making mastery guarantee a superior quality product.
