Summer Melon and Salami Salad

Ingredients:

1 pack of Olli Genoa Sliced Salami

1 honeydew melon, cubed

1 jar Castelvetrano olives, sliced

½ cup pistachios, chopped

¼ cup mint sprigs

½ tsp lemon

1 tsp olive oil

Instructions:

  1. Slice honeydew melon, Castelvetrano olives and chop pistachios. Add all to a bowl.

  2. Add mint, lemon and olive oil and mix.

  3. Plate the salad and add Genoa Sliced Salami to complete the dish!

Serve this salad up with a side of sunshine and good company. Enjoy!
