Slice off the end of the salami. Make a shallow slit down the center — don't cut too deep so it doesn't cut into the meat. Peel back the edges of the casing and pull it back to the point where you'll be slicing. The salami is now ready to be sliced and served!

You can help make it happen! Please fill out our retail partnership form to request Olli at your local store.

The salami's casing is covered in a powdery dusting of benign white mold, which is removed before eating. This is a "good" type of mold, which helps cure the salami and fend off evil, nasty bacteria.

Storage time varies by product: salami chubs and salamini keep longest unopened and refrigerated; pre-sliced salami (including preservative-free pre-sliced) and sliced prosciutto should be used within a few days of opening; all-salami and mixed trays, and wrapped cheese sticks should be consumed shortly after opening; snack packs are shelf-stable until opened. Always check the date and storage instructions printed on your specific package for exact guidance.

Our salami is made from high-quality pork. The color of the meat is a deeper mahogany color as compared to the more pinkish colored pork you may be familiar with. The flavor is earthy and meaty and really tastes awesome.

Our salami is gluten-free. Our salami may be placed in snack packs that are not gluten-free — our snack packs are not gluten-free.

Our packaging isn't hand-wrapped, but therein lies the secret to the amazing taste and texture of our salami. Our equipment seals each salami inside an airtight translucent film that keeps the salami fresh — in the store and at home.

The best thing to do is peel back the casing and check the salami for a clean and pleasant smell. If it smells and feels good, then you should be able to enjoy it.

Simply fill out our retail partnership form and we'll connect you to your local distributor.
