Toscano
Toscano is Olli's most herbaceous and aromatic salami — defined by Tuscan fennel pollen, which lends a subtle, floral licorice note entirely distinct from the anise-heavy fennel seeds used in lesser products. The fennel pollen blooms gently against the background of slow-cured pork, creating a salami that is sophisticated and fragrant without being assertive.
The Tuscan countryside in every slice
Tuscan salami — finocchiona in its most classic form — is one of Italy's great regional cured meat traditions. Fennel has been central to Tuscan cuisine for centuries; the rolling hills of the Chianti region and the Maremma coast are covered with wild fennel, and Tuscan cooks incorporated it into everything from pasta sauces to roasted pork to cured meats.
Fennel pollen — polline di finocchio — is the most prized expression of this tradition. Harvested from wild fennel blossoms in the Tuscan countryside, fennel pollen is more delicate, more floral, and more complex than fennel seed. It is an ingredient that Tuscan chefs and salumieri have prized for generations, transforming Toscano from a simple cured meat into something genuinely special.
Olli's Toscano honors the finocchiona tradition with fennel pollen rather than fennel seed — a detail that reflects our commitment to doing things the right way, even when the easier path exists. Made from 100% vegetarian-fed pork, slow-cured with no added nitrates or nitrites.
“Fennel pollen, not fennel seed — the difference is the whole point.”
